For
many years, the agricultural company Bellacera has produced an oil of exceptional
and incomparable quality and taste. The Bellacera family
follows the product closely right from the appearance of the first flower buds
on the tree to the harvest which is still done by hand. This system, called
"Brucatura" allows the olives to remain intact, thus making oils of the
best quality. The work of the company is done in the fertile
land of the Belice Valley in the communes of Castelvetrano and Partanna,
where the ancient tradition of the cultivation of olives for the production of
extra virgin olive oil D.O.P has been passed down through centuries. During
the harvest, the best olives of the "Noccellara del Belice" variety are
selected. Once selected, these are put into baskets and taken quickly and carefully
to the oil mill in order to avoid a long conservation time which could result
in fermentation. The cleaning of the olives is extremely
important as dust, earth or any other impurity (leaves, stones etc) would
make the oil dark in colour and bitter in taste. |
